The number of stores has reduced from 1444 in 2015 to 1311 this year, the research states.
In Goulburn, the two Subway restaurants have been operating in Auburn Street and Sowerby Street for over a decade.
"When we opened the first Subway at Auburn Street in 2004, it was something new that the city was experiencing," Auburn Street Subway operator John Crawford said.
But he said despite news of other closures, the Goulburn outlets would remain.
"We have no plans of closing the two outlets down," Mr Crawford said.
"The street shopping has slowed down a lot. But the Subway restaurant has established a place of its own among the people here and does not have to rely on the malls and foot traffic coming through.
"It provides a cheaper and fresh meal options to the people. There are several deals that keep coming up that make it economical for the people."
His sister, Michelle, now operates the second Subway outlet at Sowerby Street.
There are 21 part-time employees and one full-time manager currently working at the Auburn Street Subway outlet.
Shae, who works part-time at the restaurant, said it was a good source of income for her family.
"I have been working here for over an year and it has been a good experience. I have a two-year-old son and the job helps me support my family," she said.
Mr Crawford said the restaurants also provided employment to local people looking for jobs to support their family, or put themselves through school and earn money.
Meantime, a Subway spokesperson said the chain had 1353 restaurants across the country.
"We have no intention of reducing our restaurant footprint," the spokesperson said.
"Restaurants are experiencing sales growth and franchise owner profits are increasing due to Subway's menu enhancements, the launch of online ordering and the launch of third-party delivery.
"Subway will continue to innovate to increase franchise owner profitability and adapt to the changing needs of Australians, while remaining competitive in a market with more consumer choice than ever before.
"Restaurants changes and re-locations occur for a variety of reasons including rental increases, site suitability and convenience, or lease completion."
