Gregory Richard Douglas, 67, of Peelwood, wasn't required to appear in Goulburn Local Court on Wednesday, April 15 when his case was mentioned.
He was arrested on October 22, 2019, accused of sexually touching the 18-year-old German woman at a Peelwood property several times between September 28 and October 18.
He was initially charged with sexual assault and four counts of sexual touching without consent, however, those charges have since increased to eighteen.
They include six counts of sexual intercourse without consent, six counts of sexually touching another person without consent and six acts of indecent assault.
Douglas has not entered a plea at this stage.
The court heard on April 15 that there were complications with the charge certificate, which is not completed, the Director of Public Prosecutions (DPP) said.
A charge certificate outlines the offences against the accused and charges can be withdrawn or increased until it is signed off by the prosecutor.
The DPP asked for an adjournment of Douglas' case to Goulburn Local Court on May 13.
Magistrate Geraldine Beattie granted the adjournment on the condition the charge certificate was served by the DPP on the same day.
Douglas, who is in custody, did not apply for bail and it was formally refused.
The matter came about after the 18-year-old woman, who travelled from overseas to work on Douglas' rural property, made a report to the Surry Hills Police Area Command, who then referred it to the Hume Police District.
Douglas claims to be a horse breeder in Peelwood.
When officers searched Douglas' property they seized computers, mobile phones and electronic storage devices.
Douglas was initially representing himself in the case. However, solicitor Ross Hill is now representing him.
