Around 1pm the two inmates began fighting in a cell within accommodation Unit 3.
Correctional officers responded and found both men suffering stab wounds.
A prison-made weapon was located at the scene. NSW Police has been notified.
The 27-year-old returned to the centre on Saturday. The 30-year-old remains at hospital.
According to a NSW Ambulance Media spokeswoman, one inmate was airlifted to Canberra Hospital while another was flown to Liverpool Hospital.
This is the second stabbing at Goulburn Correctional Centre in several weeks.
Paramedics were called to the centre on Thursday, July 30 after a fight broke out in accommodation unit 3.
