NSW Chief Medical Officer Dr Kerry Chant said that cases of COVID-19 had increased in the regions.
"It highlights the importance of vaccine coverage levels in the regions," she said.
"We have achieved the 70 per cent double dose vaccination target and I would like to thank everyone in the community for protecting themselves, their family and the community. We have to achieve well over 90 double dose and I am confident we can achieve this ambitious target.
"Please continue to get vaccinated and support others around you.
"We are looking forward to opening on Monday and as we open up we do it safely, it is critical to wear masks where required.
Dr Chant stressed the importance of getting tested at the onset of any cold-like symptom.
"Do not go out and about with COVID symptoms, instead get tested and isolate and wait until you get a negative result."
In the Southern Highlands, zero new cases of COVID-19 were recorded as of October 7, 8 pm.
The total number of cases in the Wingecarribee LGA is 63 since the current outbreak began in June.
Southern NSW Local Health District recorded 25 new cases of COVID-19.
Of these, six new cases of COVID-19 were recorded in the Goulburn Mulwaree region. All six are under investigation.
Eight new cases of COVID-19 were recorded in the Queanbeyan-Palerang region. Three in Karabar, two in Crestwood, two are in Wamboin and one in Bungendore. All are under investigation.
The remainder of the COVID-19 cases in the SNSWLHD were in the Snowy Monaro Region and the Eurobodalla local government area.
This brings the total cases in SNSWLHD to 342 since the start of the current outbreak in June.
Across NSW, 646 cases of COVID-19 were recorded, and more than 103,00 people were tested for the virus in the 24 hours up to October 7, 8 pm.
Residents should be alert for any symptoms that could signal COVID-19 including headache, nausea, sore throat, runny nose, cough, loss of smell or taste, or fever.
If symptoms appear, people must isolate and get tested immediately, and remain isolated until a negative result is received.
