Agricultural Societies Council (ASC) NSW president Tim Capp had the privilege of declaring the show open and explained the role of his organisation.
"This time last year, Goulburn was just starting to get some rain," Mr Capp said.
"Some of the effects of the summer bushfires were experienced and then COVID-19 hit.
"Never has the saying the show must go on been more important than at this particular time.
"We provide support, service and the development of ideas for growth and sustainability for our members, like this show."
There were plenty of activities and to see and do including the dog jump, pig racing and the young farmers challenge.
Goulburn Show organiser Jacki Waugh said this edition of the show was one of the best she had ever been a part of.
"Today's been fantastic," Ms Waugh said.
"I can't believe Goulburn people or out of towners have come to support us.
"We had fantastic numbers in the animals, horses and I think everyone's had a great day."
Day two will feature more events like the wood chopping, flyball demonstrations and cattle shows.
While shows like these are made to bring communities closer together, it is also important to remember the bigger picture.
With the agriculture sector struggling at the moment, these shows promote local produce, animals, livestock and generate more interest in the industry.
